My grandfather was one of the first recognised organic beef producers; for him it was common practice the way it had always been done, call it organic if you like. He used to pick up a fist of clover mix hay, sniff and shove it under my nose “Good enough to eat !” he’d exclaim. I had a similar experience with Giorgio grabbing a handful of soil and enthusing “You can already smell the grapes !”
It isn’t enough to know grapes you must know soil. Mother earth is willing to yield up her fruits to those willing to work the land in the right way, with reciprocal respect according to the laws of harvest O’clock.
